Maple-Tossed Beluga Salad
Maple-Tossed Beluga Salad is a delightful blend of earthy Beluga lentils, sweet maple syrup, and fresh vegetables. The maple syrup dressing adds a touch of sweetness to this healthy salad, making it a perfect choice for a light lunch or a side dish for any meal.
Ingredients:
- 2 cups of Beluga lentils
- 1/4 cup of pure maple syrup
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of fresh parsley, chopped
- Salt and pepper to taste
- 1/4 cup of crumbled feta cheese optional
Instructions:
Rinse the Beluga lentils and cook them in boiling water for about 20-25 minutes, or until tender but not mushy
Drain and set aside
In a small bowl, whisk together the maple syrup, olive oil, minced garlic, salt, and pepper to create the dressing
In a large mixing bowl, combine the cooked Beluga lentils, chopped red onion, diced red bell pepper, and halved cherry tomatoes
Pour the maple syrup dressing over the salad and toss until everything is well coated
Let the salad sit for about 15 minutes to allow the flavors to meld
Before serving, sprinkle with fresh parsley and crumbled feta cheese if desired
