Spaghetti Aglio e Olio
Ingredients:
- 300g spaghetti
- 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- Salt to taste
- Freshly ground black pepper to taste
- Chopped parsley for garnish
Instructions:
Follow the directions on the package and cook the spaghetti in salted boiling water until it is al dente
Save 1 cup of the pasta water, and then drain the spaghetti
Put the olive oil in a large skillet and heat it over medium-low heat while the spaghetti cooks
Add the garlic slices and stir often until the food is golden brown and smells good, about two to three minutes
Watch out for burning the garlic
It will take another 30 seconds of cooking after you add the red pepper flakes
Toss the drained spaghetti in the oil that has garlic in it after adding it to the pan
If the pasta seems dry, slowly add some of the pasta water that you saved until you get the consistency you want
Season the spaghetti with black pepper and salt that you just ground yourself
Serve hot with chopped parsley on top
