Honey Balsamic Pulled Pork
The pulled pork was cooked to perfection in a pressure cooker and was sweet and sour at the same time.
Ingredients:
- 3 lbs pork shoulder, trimmed
- 1 cup chicken broth
- 1/2 cup balsamic vinegar
- 1/3 cup honey
- 1/4 cup soy sauce
- 1 tablespoon Dijon mustard
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions:
Add salt and black pepper to the pork shoulder
Honey, soy sauce, Dijon mustard, garlic, and dried thyme should all be mixed together in a bowl
The balsamic mixture should be poured over the pork shoulder that has been put in the pressure cooker
Put the lid back on top of the pressure cooker and set it to high pressure for 90 minutes
Let the pressure drop naturally for 10 minutes, and then release any pressure that is still there by hand
Take the pork shoulder out of the IP, use two forks to shred it, and then put it back in the IP with the sauce
Put the pulled pork on buns or over rice, and if you want, drizzle more sauce on top
