  • Assorted sushi fillings such as cucumber, avocado, crab sticks
  • Soy sauce, for dipping
  • Wasabi, for serving
  • Pickled ginger, for serving

Instructions:

Rinse the sushi rice in a fine mesh sieve until the water runs clear

In a rice cooker, combine the rinsed rice and water

Cook according to the rice cooker's instructions

In a small saucepan, combine the rice vinegar, sugar, and salt

Heat over low heat until the sugar and salt are dissolved

Set aside to cool

Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture until well combined

Allow the rice to cool to room temperature

Place a sheet of nori seaweed on a bamboo sushi mat

Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top

Arrange your desired fillings in a line along the bottom edge of the rice

Roll up the sushi tightly using the bamboo mat, sealing the edge with a little water

Using a sharp knife, slice the sushi roll into individual pieces

To create the bunny shape, cut a small triangle out of the top of each sushi piece to resemble ears

Then, use small pieces of nori seaweed to create eyes and a nose

Serve the bunny deco sushi with soy sauce, wasabi, and pickled ginger
