Crispy Chicken and Rice With Charred Scallion Sauce



The crispy chicken, fragrant jasmine rice, and tasty charred scallion sauce on top make this dish a real treat.

Ingredients:

  • 4 boneless, skinless chicken thighs
  • Salt and pepper to taste
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 4 scallions, trimmed
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Sesame seeds for garnish

Instructions:

Add salt and pepper to the chicken thighs

Follow the directions on the package to cook jasmine rice in chicken broth

Set the grill or grill pan over medium-high heat to heat it up

About two minutes on each side, grill the scallions until they are charred

Take it off the grill and cut it up

Mix garlic, soy sauce, rice vinegar, honey, sesame oil, and chopped scallions in a small bowl with a whisk

This will make the sauce

Put vegetable oil in a pan and heat it over medium-high heat

It will take about 5 to 7 minutes on each side for the chicken thighs to get golden and crispy after you add them

Pour the charred scallion sauce over the cooked rice and top with the crispy chicken

Sprinkle sesame seeds on top
