Mediterranean Pinwheels



These Mediterranean pinwheels are a delicious mix of flavors. They are made with flaky puff pastry, fresh spinach, tangy Kalamata olives, roasted red peppers, and fragrant basil.

Ingredients:

  • 1 package vegan puff pastry
  • 1 cup hummus
  • 1 cup roasted red peppers, thinly sliced
  • 1 cup baby spinach leaves
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup fresh basil leaves
  • Salt and pepper, to taste

Instructions:

Get the oven ready by heating it up to 400F 200C

On a floured surface, roll out the puff pastry

Put a thin layer of hummus on top of the puff pastry

On top of the hummus, put spinach, olives, roasted red peppers, and basil leaves

Add pepper and salt

Make a tight log out of the puff pastry

Cut the log into pinwheels that are 1 inch thick

Put the pinwheels on a baking sheet that has parchment paper on it

Put it in the oven for 15 to 20 minutes, or until it's crispy and golden brown

You can serve it hot or cold
