Orange Basil Butter Chicken with Blueberry Sauce



A tangy blueberry sauce goes well with the juicy chicken breasts in this dish, which also has the bright flavors of orange and basil. It's a great mix of sweet and savory flavors that will impress!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup unsalted butter
  • Zest of 1 orange
  • Juice of 1 orange
  • 2 tablespoons chopped fresh basil
  • 1 cup fresh blueberries
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar

Instructions:

Before you start cooking, heat the oven to 375F 190C

Add salt and pepper to the chicken breasts

Put olive oil in a pan and heat it over medium-high heat

It will take about three minutes on each side to sear the chicken breasts until they are golden brown

Put the chicken breasts in a baking dish

Set the pan back on medium heat and melt the butter in it

Mix in the orange zest, orange juice, and basil leaves

Mix everything together

Cover the chicken breasts with the orange basil butter sauce

The chicken should be cooked all the way through after 20 to 25 minutes in a hot oven

Make the blueberry sauce while the chicken is in the oven

Put blueberries, honey, and balsamic vinegar in a small saucepan and mix them together

It will take about 5 to 7 minutes of cooking over medium heat for the blueberries to burst and the sauce to get thick

Put the blueberry sauce on top of the chicken breasts and serve
