Spicy Chicken and Quinoa Bowl
A quick and tasty one-pot dinner that is great for a healthy dinner because it has whole grains and lean protein.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup quinoa, rinsed
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 cup chicken broth
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Put the Instant Pot in "saut" mode and heat the olive oil
Put in the chicken pieces and cook until they turn brown
Put in the chicken broth, cumin, chili powder, paprika, salt, and pepper
Along with the black beans, corn, tomatoes, and cumin
Mix well
Place the lid back on top of the Instant Pot and set the timer for 8 minutes
After it's done, quickly let the pressure out and open the lid
Put the spicy chicken and quinoa in bowls and top them with fresh cilantro
