Vegetable Uthappam/Savoury Pancakes



Vegetable Uthappam is a South Indian savory pancake loaded with colorful vegetables. It's a delicious and nutritious breakfast or snack option that's loved by people of all ages.

Ingredients:

  • 1 cup rice
  • 1/4 cup urad dal split black gram
  • 1/4 cup semolina sooji
  • 1/2 cup yogurt
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin seeds
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped tomatoes
  • 1/4 cup finely chopped bell peppers
  • 1/4 cup grated carrots
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon turmeric powder
  • Oil for cooking

Instructions:

Rinse the rice and urad dal separately and soak them in water for 4-6 hours

Drain the water and blend the soaked rice and urad dal together to make a smooth batter

Add water as needed to achieve a thick but pourable consistency

Transfer the batter to a bowl and add semolina, yogurt, salt, and cumin seeds

Mix well and let it ferment overnight or for 8-10 hours

Once the batter is fermented, add turmeric powder and mix well

Heat a non-stick skillet or griddle on medium heat and grease it with a little oil

Pour a ladleful of the batter onto the skillet and spread it into a thick circle

Quickly sprinkle chopped onions, tomatoes, bell peppers, grated carrots, and cilantro on top of the batter

Drizzle a few drops of oil around the edges and on top of the uthappam

Cover the skillet and cook for 2-3 minutes or until the bottom is golden brown

Flip the uthappam and cook the other side until it's also golden brown and the vegetables are cooked

Remove from the skillet and serve hot with coconut chutney or tomato chutney
