Vegan Penne with Caramelized Onions & Portabello Mushrooms
The sweet caramelized onions and savory portabello mushrooms in this vegan penne pasta dish make for a hearty and filling meal. It's great for a cozy dinner or a quick meal during the week.
Ingredients:
- 200g penne pasta
- 2 large onions, thinly sliced
- 2 portabello mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Follow the directions on the package to cook the penne pasta until it is al dente
Remove the water and set it aside
Warm up the olive oil in a big pan over medium-low heat
To make the caramel, add the sliced onions and stir them around a few times during the 20 minutes of cooking
Cut up some garlic and put some sliced portabello mushrooms in the pan
For about 5 to 7 minutes, or until the mushrooms are soft, cook
Add the balsamic vinegar and season with salt and pepper to taste
Toss the cooked penne pasta with the mushrooms and onions that have been caramelized in the pan
Before serving, sprinkle with fresh parsley
